Why is the IR from my camera so focused on one point? Is there any way to avoid this?

IR works in different ways. IR stands for Infra Red and comes in either LED format and Array format

They both flood infrared light into the scene in different ways and this is the key reason why there are different cameras on the market.

A camera's setup is a key indicator of how it will operate in a specific scene situation.

In a wide area where night vision is required. IR Array will be the best choice.

In a narrow area where night vision is required. IR LED will be the best choice.

However, APro cameras now come with Smart IR which automatically shuts off portions of the LED to ensure you don't get a whitewashed image in areas where there may be a person or car in sight.

The best way to combat your issue would be to move the camera pointing towards an area where there is more space with fewer differences in the foreground and background space. This way the IR gets distributed more evenly.
